    Vegan Barley Gems

    List of Ingredients

    1 c sifted unbleached white flour
    1/4 c sugar
    2 1/2 tsp baking powder
    1/2 tsp salt
    1 c rolled barley
    1/2 c rolled oats
    1/2 c raisins
    1/4 c chopped nuts
    1 c soy milk
    1/4 c applesauce
    1/4 c tofu, whipped
    Topping:
    2 Tbsp sugar
    1 tsp cinnamon


    Recipe

    Sift together flour, sugar, baking powder and salt. Stir in oats, rolled barley, raisins, and nuts. Combine soy milk, applesauce and whipped tofu; add to dry ingredients and mix only until dry ingredients are moistened. Fill greased muffin pans 1/2 full. For topping, combine sugar and cinnamon; sprinkle on top of mufins. Bake at 425 degrees for 15 minutes or until done. Serve piping hot with margarine. Makes 12 muffins.
