    Chicken Avocado Burritos

    List of Ingredients

    3 c cooked and shredded chicken breast (can use any chicken leftover etc.)
    1 Tbsp oil
    2 avocados
    1 lime
    1/2 lb shredded Cheddar cheese
    green or red Mexican salsa
    8 flour tortillas
    Cilantro, black olives and sour cream for toppings as desired


    Recipe

    Dice the avocados. Squeeze juice of lime and toss with avocados and a Tbsp of salsa. Butter one side of each tortilla. On the other side, place one-eighth of the chicken, avocado mix and cheese. Fold on each end of the tortilla then roll up the mixture in the tortilla. On a dry, hot griddle or the skillet you cooked the chicken in, brown several tortillas at a time turning as they brown lightly. Top with sour cream, additional salsa, cilantro and black olives if desired (comment: the mixture of tastes inside the burrito is what tastes so good.) Serves 4.
