    Cheese Soup

    Terry Boydston - dad of Rose Boydston - 5th - Cabrales

    List of Ingredients

    2 lbs ground beef
    2 medium-sized onions
    2 cans whole kernel corn
    2 cans kidney beans (can substitute chili beans)
    2 cans diced tomatoes (can substitute tomatoes with chiles)
    2 (8-oz) packages Velveeta cheese
    2 (8-oz) packages mild (or hot) mexican style Velveeta
    1 large bag of tortilla chips

    Recipe

    Dice onions. Saute onions with ground beef, drain if desired. Put in pot, then add corn, beans, tomatoes, undrained. Put on low heat, then cut blocks of cheese in small pieces and put in pot. Stir frequently. When cheese melts, it is ready to serve. Serve in bowl with chips on side. Serves 8-10 people.
    Note: Very rich, goes a long way.
    Note: If not spicy or hot enough, add black pepper.
