Mom Dullea's Potato Soup

Recipe Introduction
This soup recipe was a cold weather favorite at my sorority in college. Our house mother would have steaming pots of this ready for us when we got back from class.
List of Ingredients
2 (2-lb) pkg frozen hash brown potatoes or 8-10 potatoes, peeled and cut into small pieces
2 small onions, chopped
2 stalks celery, chopped
6 chicken bouillon cubes
1 Tbsp parsley flakes
5-6 c of water (cover the potatoes)
1 Tbsp salt
1/4 lb butter or margarine
1 large can of evaporated milk
1/2-3/4 lb cheddar or american cheese, shredded or cubed
Recipe
Cook the first 8 ingredients until potatoes are soft in a large kettle. (Optional: Mash potatoes when soft)
Add 1 can of evaporated milk. Add cheese. Cook until cheese is melted and soup is hot.
