    Zucchini Casserole

    Debbie Rhinesmith, - mom of Calvin Rhinesmith - 4th - Rodriguez

    List of Ingredients

    2 lbs zucchini, sliced thin
    1 pkg Pepperidge Farm Stuffing
    2-oz pimento, diced
    8-oz sour cream
    1 can cream of chicken soup
    1 leek, sliced
    1/4 c (1/2 stick) butter melted
    1/2 tsp salt and pepper, each
    1 carrot, grated

    Recipe

    In a bowl, mix everything together, reserving 1 cup stuffing. Place in a 9 x 13 inch pan. Top with remaining stuffing. Bake at 350 degrees for 35 minutes.
