Ground Beef and Pasta Skillet Dinner

- 4 oz. penne pasta
- 2 Tbsp. olive oil
- 1 large onion, chopped
- 2 red bell peppers, chopped
- 3 cloves garlic, minced
- 1 lb. 95% lean ground beef
- 2 cans (14.5 oz. each) diced tomatoes
- 2 c. chopped baby spinach
- 1 tsp. dried oregano or Italian seasoning
- 1/2 tsp. salt
- 2 Tbsp. pine nuts, toasted
Instructions
- Prepare pasta according to package directions.
- Heat oil in large skillet over medium heat. Cook the onion, peppers and garlic, stirring for 3 min. Add the beef and cook, stirring, for 5 min. or until browned and no longer pink.
- Stir in the tomatoes, spinach, salt and cooked pasta.
- Sprinkle top with the pine nuts. Serves 4 at 427 cal. each (39.3 g. carbs)
