    • 4 oz. whole grain penne pasta
    • 2 Tbsp. olive oil
    • 1 lrg. onion, chopped
    • 2 red bell peppers, chopped
    • 3 cloves garlic, finely minced
    • 1 lb. 95% lean ground beef
    • 2 cans (14.5 oz. each) canned diced tomatoes
    • 2 cups chopped baby spinach
    • 1 tsp, dried Italian seasoning
    • 1/2 tsp salt
    • 2 Tbsp. pine nuts, toasted


    Instructions


    1. Prepare pasta according to package directions.
    2. Heat the oil in a large skillet over medium heat. Cook the onion, peppers and garlic, stirring for 3 minutes. Add the beef and cook, stirring, for 5 minutes, or until browned and no longer pink.
    3. Stir in the tomatoes, spinach, Italian seasoning, salt and cooked pasta.
    4. Sprinkle top with pine nuts. Makes 4 generous servings at 427 cal each, 16.6 g. fat, 415 g. sodium, 39.3 g carbs.
