WILTED SPINICH & BACON SALAD

List of Ingredients
- 8 oz. bacon, fried & crumbled, reserve grease
- 2 Tbsp bacon grease, from reserved grease
- 1/3 c red wine vinegar
- 2 Tbsp sugar
- 1 tsp dried mustard
- 1/4 c water
- 1 lb. fresh spinach, torn up
- 2-1/2 c (8 oz.) mushrooms, sliced
- 1 small red onion, sliced
- 2 eggs, hard-cooked & chopped
Instructions
- Combine 2 Tbsp bacon grease, vinegar, sugar, mustard and water in saucepan. Simmer 5 minutes.
- Combine spinach, mushrooms and onion. Pour hot dressing over salad ingredients and toss. Garnish with bacon and eggs.
