    CANADIAN CHEESE SOUP

    List of Ingredients


    • 1 c finely chopped carrots
    • 1/2 c finely chopped celery
    • 1/2 c finely chopped onion
    • 4 Tbsp butter
    • 1/2 c flour
    • 4 c milk
    • 3 c chicken broth
    • dash paprika
    • 12 oz. (3c) shredded American cheese
    • 1/4-1/2 tsp dry mustard, optional
    • 2-4 drops Tabasco Sauce, optional


    Instructions


    1. Combine first 4 ingredients in a saucepan and cook over low heat till vegetables are tender. Stir in flour; add milk, chicken broth and paprika. Cook and stir until thick and bubbly. Add cheese, stirring till melted. DO NOT BOIL! Remove from heat and add optional ingredients if you wish.
