    A delicious way to liven up rice for that special occasion.


    List of Ingredients


    • 2 Tbsp olive oil
    • 2 1/4 cups basmati rice or Thai jasmine, soaked for 1 hour and drained
    • 3 cups coconut milk
    • 1 tsp salt
    • 1 bay leaf
    • 2 tbsp chopped fresh cilantro
    • 2 tbsp chopped fresh mint
    • 2 green chiles, deseeded and chopped finely


    Instructions


    1. Heat the oil in a pan, add the rice and stir until it becomes translucent.
    2. Add the cocunut milk, salt, and bay leaf. Bring to a boil and cook until all the liquid is absorbed.
    3. Lower the heat as much as possible and cover the pan tightly. Cook for 10 minutes.
    4. Remove the bay leaf and stir in the fresh cilantro, mint and green chiles. Fork rice gently and serve.
