A delicious way to liven up rice for that special occasion.
List of Ingredients
- 2 Tbsp olive oil
- 2 1/4 cups basmati rice or Thai jasmine, soaked for 1 hour and drained
- 3 cups coconut milk
- 1 tsp salt
- 1 bay leaf
- 2 tbsp chopped fresh cilantro
- 2 tbsp chopped fresh mint
- 2 green chiles, deseeded and chopped finely
Instructions
- Heat the oil in a pan, add the rice and stir until it becomes translucent.
- Add the cocunut milk, salt, and bay leaf. Bring to a boil and cook until all the liquid is absorbed.
- Lower the heat as much as possible and cover the pan tightly. Cook for 10 minutes.
- Remove the bay leaf and stir in the fresh cilantro, mint and green chiles. Fork rice gently and serve.
