    Bacon and Egg Muffin

    List of Ingredients




    2 plain white muffins
    4 rashers smoked or unsmoked back bacon, grilled until crisp
    2 medium sized eggs, lightly poached in simmering water for approximately 3 minutes
    2 x 15ml spoons Sainsburys hollandaise sauce
    15ml spoon freshly chopped chives
    salt and freshly ground black pepper

    Recipe



    Split the muffins in half and lightly toast on both sides.

    Arrange 2 slices of crispy bacon on one half and top with the freshly poached egg.

    Spoon over a 15ml spoon of hollandaise sauce, sprinkle with chives and add seasoning to taste. Eat straight away!


    Serves: 2
