Chicken hash has always been popular for this morning meal; it was a favorite of President Andrew Jackson.
List of Ingredients
3 - 4 cups finely cubed cooked chicken
1 cup fresh chopped mushrooms (optional)
1 diced green onion
1 cup cream
2 tablespoons fresh minced parsley
Salt
Pepper to taste
Pinch of nutmeg
2 tablespoons butter
2 tablespoons vegetable oil or bacon drippings
Recipe
Place first 7 ingredients in a bowl and mix together. If you have some leftover chicken gravy, it may be used instead of cream. Melt butter and oil in a frying pan until hot, but not bubbling. Add the hash mixture. Cook 4 minutes over medium-high heat. Reduce heat, cover pan, and cook an additional 10 minutes. Flop out of the pan onto a warmed platter so the browned side is facing up.
Yield
Serves 4, and goes splendidly with bacon and poached eggs!
