List of Ingredients
3 tbsp. vegetable oil
2 pkgs. refrigerated diced potatoes
1 lb. Hillshire Farm® Smoked Sausage, cut into 1/4" medallions
1 medium onion, diced
1 pepper (any color), diced
Salt and pepper, to taste
2 cups Cheddar cheese, shredded
6 eggs, poached or in your favorite style
salsa (optional)
Recipe
Heat oil in a large skillet on medium-high heat, fry potatoes until just starting to brown, about 5 minutes. Add smoked sausage, onions and peppers, and continue to cook until golden brown (about 5 more minutes). Sprinkle shredded cheese evenly over the top, cover and remove from heat. Poach or fry eggs and nestle eggs on top of the potatoes. Serve with salsa if desired.
