Simple Sausage Potato Pancakes

2 large red potatoes, peeled, quartered
1/2 small onion
1/4 cup cholesterol-free egg product or 1 egg
1 Tbsp. flour
1/2 tsp. salt
2 frozen BOCA Meatless Breakfast Patties, quartered
2 tsp. vegetable oil, divided
Recipe
PLACE potatoes, onion, egg product, flour and salt in blender container; cover. Blend until smooth. Add breakfast patty pieces; cover. Blend an additional 10 seconds.
HEAT 1 tsp. of the oil in large nonstick skillet on medium heat. Add potato mixture to hot skillet to form 8 pancakes, using 1/4 cup of the potato mixture for each pancake.
COOK 3 minutes on each side or until golden brown on both sides, adding remaining oil as necessary.
