Black Bean Chili Over Soft Polenta

List of Ingredients
6 cups cooked black beans or canned black beans, rinsed and drained
1 1/2 cups water
1 onion, chopped
1 green bell pepper, seeded and chopped
2 celery stalks, chopped
3 garlic cloves, minced
2 tablespoons chili powder
1 tablespoon EACH cumin and paprika
2 tablespoons chopped fresh oregano or 2 teaspoons dried oregano
1/4 teaspoon cayenne pepper
3 tomatoes, coarsely choppedRecipe
Place all ingredients, beginning with the beans in the water, bringing to a boil. Immediately reduce to a simmer, allowing the ingredients to blend and reduce to chili consistency.
Serve over a soft, warm bed of polenta or with fresh cornbread. Serves 4 to 6.
