* 1 pound COLEMAN chuck roast, cut in small pieces
* 1 tablespoon vegetable oil
* 1 28 ounce can crushed seasoned tomatoes
* 1 cup beer
* 1 large onion, chopped coarsely
* 1/3 cup unsulphered molasses
* 1 teaspoon cumin
* 1 teaspoon chili powder
* 1 15 ounce can baked beans, partially drained
* 1 15 ounce can chili beans, partially drained
* 1 15 ounce can black beans, drained
* 1 cup low-fat cheddar cheese
Recipe
n a large Dutch oven, heat oil. Brown beef . Add tomatoes, beer, onion, molasses and seasonings. Heat for 30-40 minutes until meat is tender. Add the beans and heat thoroughly. Serve with cheese as a garnish. Makes 8 servings.
