Gridiron Beef and Bean Chili

Nonstick cooking spray
4 teaspoons olive oil, divided
1½ pound extra lean (9% fat or less) ground beef
2 cloves garlic, peeled, minced
1 onion, peeled, diced
1 green pepper, washed, cored, diced
2 tablespoon chili powder
2 teaspoon ground cumin
32 oz canned or stewed tomatoes
1- 16 oz jar prepared salsa
2 teaspoons sugar
1-24 oz. can red kidney beans, drained
½ cup reduced fat cheddar cheese, shreddedRecipe
Spray large (4-qt.) nonstick pot with cooking spray. Add 2 teaspoons oil
and heat over medium high heat. Add ground beef and sauté, stirring
frequently, until browned, 8-10 min. Drain off fat.
Transfer beef to paper towel and pat off excess fat. Spray pot again
with cooking spray. Add remaining oil, garlic, onion and green pepper to
pot. Cook over medium heat, stirring frequently, 5-6 minutes, or until
vegetables are soft.
Add chili powder, cumin, tomatoes, salsa, and sugar, stirring all. Add
meat and bring to a boil, reduce heat, cover and simmer 10-15 minutes to
thicken slightly. Add beans and cook additional 5 minutes, until beans
are heated. Top with shredded cheese and serve immediately.
