Kidney Bean Chili

30 ml canola oil 2 tbsp
1 small onion, chopped 1
1 clove garlic, minced 1
125 ml green peppers, chopped 1/2 cup
500 ml whole kernel corn 2 cup
250 ml water 1 cup
20 ml tomato paste 1 1/2 tbsp
750 ml canned kidney beans, drained 3 cup
5 ml dried oregano 1 tsp
5 ml chili powder 1 tsp
1 ml ground cumin 1/4 tspRecipe
In a large skillet over medium heat; heat oil. Saute onions and garlic 3 minutes. Add peppers; cook 3 minutes. Add corn, water and tomato pste. In small bowl with fork, mash 1 cup (250 ml) ml beans. Add mashed beans, remaining whole benas, oregano, chili powder and cumin to skillet mixture. Bring to a boil. Reduce heat to low; simmer 30 minutes or until thickened.
