    # 1 med butternut squash, peeled & cubed
    # 1 28 oz. can chopped tomatoes
    # about a cup of vegetable broth
    # 3 chopped carrots
    # 1 big onion
    # beans of your choice, at least 2 15 oz. cans I suggest black and pinto
    # 1 4 oz. can green chilies
    # cinnamon
    # allspice
    # cayenne
    # hot sauce

    Recipe



    Saute squash in a bit of broth until slightly soft (10 min or less) Remove from pan. Add onions and carrots and saute until onions are soft. Add cayenne and saute one more minute. Then add tomatoes and broth. simmer mixute for 30 minutes. Add squash and beans and spices. Spices are kind of a personal thing, so add however much you like. I probably add 2 to 3 tsp. cinnamon, a 1/2 tsp allspice and 3 tsp. cayenne, and a few drops of hot sauce. This chili is mild and satisfying served over vegan cornbread. Very filling. Low in Fat.
