    4 tablespoons shortening or oil
    2 onions, chopped
    6 cloves garlic
    1 pound beef chuck, cut in "man size" chunks
    1 teaspoon salt
    4 tbl. chili powder (yes, tablespoons) -- (4 to 6)
    1 tablespoon ground cumin
    1 tablespoon dried oregano
    cayenne pepper to taste
    4 cups beef broth

    Recipe



    Heat the oil in a large pot. Stir in onions and garlic till soft. Add beef and salt. Cook till beef loses its pink color. Add the chili powder, salt, cumin and cayenne. Continue to cook for about 5 minutes. (You might want to open a window at this point) Add beef broth, and simmer, partially covered for about 2 hours. Stir occasionally. Serve over rice and/or red pinto beans. (Note: this chili will come out practically black in color)
