These are restaurant quantities, so you'll have to do some adjusting for home use.




List of Ingredients




5 #10 cans tomatoes
8 lbs. beef stew meat
1 qt. cider vinegar
12 C. coarsley chop onions
3/4 C. finely chopped garlic
1/2 C. oregano leaves
6 C. chopped jalepenos
1/2 can cumin
5 #10 cans kidney beans


Recipe



Combine all ingredients except kidney beans in a 10 gallon pot. Bring to a boil and simmer, stirring frequently, for 3 to 4 hours until the meat is very tender. Add beans and cook another hour.
