2 chicken breasts or one small pkg. chicken legs (5 or 6), skinned
1 can (16 oz.) kidney beans, drained
1 can (16 oz.) pinto beans, drained
1 small can chopped green chilies
1 can (14 oz.) diced tomatoes
1 can (14 oz.) fat-free chicken broth
1 cup frozen corn kernels
1 medium onion, chopped
1 green pepper, chopped
1 teaspoon cumin
1 to 3 teaspoons chili powder (depending on taste)
½teaspoon garlic powder
Water
Salt to tasteRecipe
Put all ingredients but water and salt in soup pot or Dutch oven. Bring
to boil and turn down to simmer. Cook, covered, for one hour or until
chicken is very tender. Stir occasionally and add water as needed if it
becomes too thick. Remove chicken pieces, shred meat and return to pot.
Discard bones. Add salt to taste and additional chili powder if desired.
Makes six servings.
