Walk On The Wild Side Venison Chili

10 lbs ground venison
5 lbs Jimmy Dean Hot Sausage
3 yellow onions
2 red bell peppers
2 yellow bell peppers
2 green bell peppers
1/2 cup minced garlic
6 24oz packs of fresh mushrooms
Commercial size bottle of Heinz Ketchup
4 large cans chopped stewed tomatoes
2 bottles Dr. Pete's Burgundy Marinade
Paprika
Jalapeno Tabasco Sauce
Ground Mustard
Worschestshire Sauce
Salt & pepper
5 sticks of butter
Recipe
Marinate ground venison in Dr. Pete's Sauce for 4 hours. Wash and dry whole mushrooms and saute in 3 sticks of butter uncovered for 6 hours until thoroughly reduced. Dice onions and bell peppers into small bits and saute in 2 sticks butter with minced garlic until tender (about 30 minutes). Brown hot sausage, crumble and drain off all the fat. Brown venison in Dr. Pete's sauce. Combine sausage and venison then salt and pepper to taste. Add onions & bell peppers. Drain off juices. Drain stewed tomatoes and add to venison mixture. Add ketchup and worschestshire to taste. Splash in drops of Jalapeno sauce sparingling. Add 1/2 cup paprika and 1/4 cup ground mustartd. Simmer over low heat for an hour and a half. Serves 30 generous helpings. Top with grated fresh parmesan cheese and sour cream.
