# 5 onions chopped
# Oil
# Salt and pepper to taste
# 4 lbs.. beef chuck, chili grind
# 5 cloves garlic, minced
# 4 Tbs. oregano
# 2 Tbs. woodruff (an herb)
# 1 tsp. cayenne pepper
# 1 Tbs. paprika
# 1 Tbs. New Mexico chili powder
# 3 Tbs. ground cumin
# 1 tsp. crushed chiperos (chili petines pepper)
# 4 dashes Tabasco sauce
# 3 (10 ounce) cans tomato paste
# 4 Tbs. Masa HarinaRecipe
Brown onion in oil, season with salt and pepper, transfer to chili pot. Brown beef in skillet, adding more oil if necessary. Add garlic and 1 tablespoon oregano. In paper sack, shake together rest of oregano with next 6 ingredients. Add this mixture, meat and all other ingredients except masa and enough water to cover meat. Simmer at least 2 hours or till meat is tender. Cool and refrigerate overnight. Warm and thicken with a paste of masa and water. Heat through.
