3 lb. hamburger (lean)
2 large onions, chopped
1/2 green pepper, chopped
3 cloves garlic, chopped
1 tsp. oregano, ground
1 tsp. sweet basil, ground
1 tsp. monosodium glutamate
1/2 tsp. freshly ground black
pepper
1 tsp. red pepper, ground
2 Tbsp. bacon drippings
1 tsp. cumin seed, ground*
3 Tbsp. chili powder
1 (15 oz.) can whole tomatoes
2 (8 oz.) cans tomato sauce
1 qt. hot water
1 (17 oz.) can chili hot
beans, drained and washed
salt to taste
Recipe
Brown hamburger in heavy iron skillet in bacon drip-
pings. Remove meat from skillet to drain. Saute in the
skillet for 2 minutes the onions, pepper and garlic and the
oregano, basil, monosodium glutamate, black pepper, red pepper,
cumin seed and chili powder. Stir until well mixed. Add the
browned beef. Then add the tomatoes, tomato sauce and hot
water. Stir well and bring to a boil. Simmer over low heat
for 2 1/2 hours, stirring often. Salt to taste. Add more
chili powder as taste requires. During the last 20 minutes,
add the beans. Be sure you have washed the gravy from the
beans before you add them to the chili.
*The best flavor is obtained if you roast whole cumin
seed in a frying pan and then crush or grind them.
