B. Thomas Restaurant Black Bean Chili

List of Ingredients
1 lb ground Bison (can substitute lean ground beef)
1 lb Italian sausage
1 diced yellow onion
1 diced green pepper
1 diced garlic clove
2 14oz cans diced tomatoes (undrained)
1 14oz can black beans (drained)
2 each beef bull ion cubes (or 2oz beef base)
1 Tbl. cider vinegar
2-3 Tbls. chili powder
2 tsp. prepared mustard
1 tsp. oregano leaves, dried
2 tsp. ground cumin
1/2 tsp. crushed red pepper flakes (optional)
1/4 - 1/2 tsp. ground black pepper
Recipe
Cook Bison and sausage in a medium sized pot until browned. Pour into strainer and remove excess moisture. Place pan back on stove over medium high heat and add onions, green pepper, and garlic. Saute until onions are tender. Stir in tomatoes and remaining ingredients, bring to a simmer, reduce heat and cook another 30 to 45 minutes.
