2 cups chopped cooked BUTTERBALL® Boneless Young Turkey
1 tablespoon vegetable oil
1-1/2 cups chopped onions
1-1/2 cups chopped red bell peppers
2 tablespoons mild Mexican seasoning*
1 clove garlic, minced
1 can (28 ounces) tomato purée with tomato bits
1 can (15-1/2 ounces) light red kidney beans, undrained
*To make your own Mexican seasoning, combine 1 tablespoon chili powder, 1-1/2 teaspoons dried oregano and 1-1/2 teaspoons ground cumin.
Recipe
Heat oil in large skillet over medium heat until hot. Add onions, bell peppers, Mexican seasoning and garlic. Cook and stir 4 to 5 minutes. Add tomato purée and beans; stir in turkey. Reduce heat to low; simmer 5 minutes.
Serves 8.
