Black-Eyed Pea Chili

List of Ingredients
1 tbl olive oil
1 x white onion, chopped
2 x cloves garlic, minced
1 x pimento, seeded and diced
1 med sweet potato, peeled and diced
3 x tomatoes, peeled and chopped
6 cup cooked black-eyed peas
1 x mirasol chile, stemmed and crushed
1 tbl tomato paste
3 cup vegetable stock or broth
1 tbl chopped fresh basil, OR
1 tsp crushed dried basil
2 tbl ground New Mexico red chile
1 1/2 tsp salt
1 tsp freshly ground black pepper
1/2 tsp crushed dried oregano
Recipe
Heat the oil in a large saucepan and saute the onion, garlic, and pimento until soft. Add the rest of the ingredients, cover, and bring to a boil.
Reduce the heat and simmer for 1 hour.
