1/4 c. salad oil
4 cloves minced garlic
2 lg. onions, chopped
8 ribs celery, chopped
6 green onions, chopped
2 tbsp. parsley, chopped
4 lbs. ground beef
2 (6oz.) cans tomato paste
2 (15 oz.) cans tomato sauce
8 to 10 c. water
2 (1 1/2 oz.) cans chili powder
2 1/2 tsp. salt
Dash pepper
2 cans kidney beans, drainedRecipe
Brown garlic, onions, celery and parsley in salad oil; saute until tender. Add ground beef and brown. Drain pan drippings, saving 6 tablespoons. Add reserved drippings and remaining ingredients (except beans) to met mixture. Simmer 1 to 2 hours. Add beans last 15 minutes. Serves 18 to 20.
Notes: Start with 8 cups of water, adding only if mixture is too thick!
