List of Ingredients
2 lbs. ground sirloin or turkey
3 T. veg. oil
1 large onion, chopped
1 sweet red bell pepper, cored, seeded and chopped
1 sweet green bell pepper, cored, seeded and chopped
3 cloves garlic, minced
1 (28 oz.) can crushed tomatoes
1 (28 oz.) can peeled tomatoes
2 T. chili powder
1 t. oregano
1 t. salt
1 t. sugar
1/8 t. cayenne pepper (more if you want to kick up the fire)
1/2 t. paprika
1 t. cumin
2 (15 oz.) cans kidney beans, 1 light, 1 dark
hot fluffy white rice (optional)
grated cheddar (optional)
Recipe
Brown the meat, discard any fat and set aside in a large pot.
Sauté the veggies in oil, add to the meat. Add all other ingredients, stir, cook on low heat simmer for 2 hours.
Serve with homemade corn muffins.
Yields 8-10 servings
