2 pounds No. 1 red beans
1/4 pound cubed salt pork, bacon or moose tallow
3 pounds cubed moose, caribou, reindeer
2 small onions
Oil
1 tablespoon dried parsley
1 clove garlic, crushed, or garlic salt to taste
3 8-ounce cans tomato sauce
1 1/2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon oregano
6 dried chiles, crushed
1/2 cup chili powder
1 32-ounce can whole tomatoes
Recipe
Wash beans well, removing any pebbles. Cover with cold water and soak overnight. (Without soaking, dry beans require almost four hours of cooking.)
Simmer beans, covering with same water, in a large pot until they approach tenderness (about one hour). If any water is added, use boiling water.
Saute salt pork (or substitute) briefly and add cubed meat, sauteing an additional 15 minutes. Add contents of skillet to beans.
Saute chopped onions in oil until half tender and add to beans. Add parsley, crushed garlic, tomato sauce, salt, pepper, oregano, crushed chiles and chili powder to bean pot and mix gently.
Cover and simmer for one hour. Break up whole canned tomatoes and add to pot 20 minutes before chili is done.
Makes 6 quarts.
