List of Ingredients
3 teaspoons canola oil, divided
5 pounds beef chuck, ground or cut into small cubes
2 large onions, peeled, diced
1 large green pepper, washed, cored, diced
2 large jalapeno peppers, seeded, deveined, minced
5 cloves garlic, peeled, minced
1 can (15 to 16 ounces) tomato sauce
12 ounces beer
12 ounces water
4 tablespoons favorite chili powder or to taste
Salt and pepper to taste
Crushed red pepper flakes to taste
Optional:
Cooked light red kidney or pinto beans
Sour cream
Grated cheese
Recipe
In a large skillet, heat 2 teaspoons of the oil over medium heat. Add the meat and brown. Drain excess liquids. In a separate skillet, heat the remaining teaspoon oil over medium heat. Add the onions, green pepper, jalapeno peppers and garlic and saute until tender. Transfer the browned meat and vegetables to a large pot. Add the tomato sauce,
beer, water, chili powder, salt, pepper and crushed red pepper flakes to taste. Simmer the mixture about 2 hours.
Serve over cooked beans garnished with sour cream, grated cheese and additional crushed red pepper, if desired.
Makes 8 servings.
