Stratford's Sweet Chili

1 (19 oz) can chickpeas, drained and rinsed
1 (19 oz) can red kidney beans or black beans, drained and rinsed
1 (10 oz) can corn kernels, or 1 cup frozen corn
1 (28 oz) can tomatoes with herbs and spices, chopped
2 carrots, chopped
2 large cloves garlic, minced
1 onion, chopped
1 cup ketchup
1/4 cup liquid honey
3 tbsp chili powder
1/4 to 1/2 tsp cayenne pepper
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
Recipe
Combine all ingredients except peppers in a crockpot and stir. Cover and cook on low for 8-10 hours or on high for 4-6 hours. Add peppers and cook on high for an additional 20 to 25 minutes.
This recipe lends itself very well to variations. I like to add chopped celery, and I always add an extra can of beans, usually a mixed variety. You could use dried cooked beans.
