Sweet potato chili

2 medium onions, chopped
2 cloves garlic, minced
1 tbsp. vegetable oil
2 hot Italian sausages, about 1/3 lb., skins removed
2 tbsp. chili powder
1 tsp. ground cumin
1 lb. sweet potatoes, peeled and diced
1 can red kidney beans, drained and rinsed
1 can tomatoes, chopped
1 tsp. dried oregano leaves salt, pepper and dash of Tabasco sauce
Recipe
1. In a medium heavy-bottomed saucepan, combine onions, garlic and oil. Stir in sausage, chili powder and cumin until very well blended. Cook over medium
heat for 10 minutes, stirring occasionally. Add sweet potatoes, kidney beans, tomatoes and oregano. 2. Return mixture to boil; reduce heat and cook, covered, 1 hour, stirring occasionally. Season with salt, pepper and
Tabasco to taste.
