    Cheesy Bacon Spanish Rice

    slices bacon
    1 cup onion, chopped
    1/2 cup green pepper, diced
    1 (16 oz.) can tomatoes, chopped
    1 (8 oz.) can tomato sauce
    1 tsp. salt
    1 1/2 cups long grain rice, uncooked
    1/2 cup Cheddar cheese, shredded

    Fry bacon until crispy. Remove from pan, drain and crumble into pieces.
    Preheat oven to 350 degrees. In bacon drippings, cook onion and green pepper
    until tender. Drain tomatoes, reserving liquid. Add enough water to the
    liquid to make
    1 3/4 cups. Add liquid, tomatoes, tomato sauce and salt to onion mixture.
    Heat to boiling. Stir in rice. Remove from heat and pour into greased 1 1/2
    qt. casserole. Cover and bake for 35 minutes or until rice is tender and
    liquid is absorbed. Fluff rice with fork; sprinkle with cheese and bake 5
    minutes more. Garnish with bacon.
