List of Ingredients
½ cup vegetable stock
2 cloves garlic, chopped
1 small onion, chopped
1 small red bell pepper, sliced
2 cups long grain white rice
¼ cup chopped fresh coriander
¼ cup mild salsa
¼ cup soy sauce
½ tsp chili powder
Recipe
In the wok or sauté pan, heat the vegetable stock over high heat and stir-fry the garlic, onion and red bell pepper for about 2 to 3 minutes.
Add the rice, reduce the heat to medium and continue to stir-fry for 3 to 4 minutes.
Add remaining ingredients and stir-fry for 3 to 4 minutes.
