Rocco's tips for perfect pasta. Always fill the pot 3/4 full of water and bring to a rolling boil before adding pasta. After adding the pasta, raise the heat slightly to bring the water quickly back to boiling. Stir the pasta with a wooden spoon to separate. For 'al dente' style pasta (slightly firm) follow the cooking time on the box and drain as soon as pasta reaches desired doneness. Befor draining the pasta, remove a few spoonfulls of boiling water and set aside. The water can be added to drained pasta if it becomes too sticky, or to dilute a very thick sauce. Pasta will continue to cook even after its been drained. For best texture, serve immediately.
