    Arrowroot - 1 Tbsp = 1 ½ Tbsp all-purpose flour; or 2 ¼ tsp cornstarch

    Baking Powder - 1 tsp = ¼ tsp baking soda plus ½ tsp Cream of tartar

    Bread Crumbs, dry- 1 cup = ¾ cup cracker crumbs

    Broth, chicken or beef - 1 cup = 1 bouillon cube, or 1 tsp Granules

    Butter - 1 cup, 2 sticks = 7/8 cup vegetable oil or Shortening
    1 tsp Granules

    Buttermilk - 1 cup = 1 cup plain yogurt or 1 tbsp Lemon juice or vinegar in 1 cup Minus 1 Tbsp of milk (let stand 5 minutes)

    Chocolate, semisweet- 1 oz = ½ oz unsweetened plus 1 Tbsp Granulated sugar

    Chocolate, unsweetened - 1 oz = 3 Tbsp baking cocoa plus 1 Tbsp Butter or margarine

    Coconut Milk, fresh- 1 cup = 3 Tbsp canned plus enough hot Water to make 1 cup

    Cornstarch 1 Tbsp = 2 Tbsp all-purpose flour or 2 tsp Arrowroot

    Corn Syrup, light/dark - 1 cup = 1 ¼ cups packed brown sugar plus ¼ cup of whatever liquid is in recipe

    Cream, Sour - 1 cup = 1 cup plain yogurt

    Cream, Whipping - 1 cup = ¾ cup whole milk plus 1/3 cup butter

    Egg, whole - 1 egg = 2 egg yolks plus 1 Tbsp water

    Egg Yolk - 2 yolks = 1 whole egg ( for thickening sauces etc.)

    Flour, self-raising - 1 cup = 1 cup all-purpose plus 1 ½ tsp Baking powder

    Honey - 1 cup = 1 ¼ cups granulated sugar plus ¼ cup liquid used in recipe

    Lemon Juice - 1 tsp = ½ tsp vinegar

    Milk, Sour - 1 cup = 1 Tbsp lemon juice or vinegar plus enough milk to make 1 cup (let stand 5 minutes)

    Sugar, Confectioners - 1 cup = ½ cup plus 1 Tbsp granulated sugar

    Sugar, Light Brown - 1 cup = ½ cup dark brown plus ½ cup granulated sugar

    Sugar, Granulated - 1 cup = 1 ¾ cups confectioners or 1 cup packed light brown sugar

    Tomato Juice - 1 cup = ½ cup tomato sauce plus ½ cup water

    Tomato Sauce - 1 cup = 3/8 cup tomato paste plus ½ cup water

    Vinegar - 1 tsp = 2 tsp lemon juice

    Yogurt - 1 cup = 1 cup buttermilk or 1 cup milk plus 1 Tbsp lemon juice
