Chipotle-Orange BBQ Meatballs

List of Ingredients
- 12 oz lean ground beef
- 1/2 cup crushed tortilla chips
- 1/2 cup shopped cilantro
- 1/3 cup sliced scallions
- 1 large egg
- 1 tsp each cumin, oregano and minced garlic
- 2/3 cup chipotle bbq
- 1 1/2 tsp grated orange zest
- 1/4 cup OJ
Instructions
- Using your hands, mix beef, chips, 1/3 cup cilantro, scallion and egg, cumin, oregano and garlic in a bowl until well combines. Form into 30 balls.
- Coat a large nonstick skillet with spray and heat over med heat. Add meatballs and increase heat to med high and cook 5-7 minutes, turning until browned and cooked thru.
- Add BBQ sauce and orange juice and zest and remaining cilantro to skillet. Cook, tossing, over low heat until meatballs are coated. Transfer to serving plate and toothpick for serving.
