    Chipotle-Orange BBQ Meatballs

    List of Ingredients


    • 12 oz lean ground beef
    • 1/2 cup crushed tortilla chips
    • 1/2 cup shopped cilantro
    • 1/3 cup sliced scallions
    • 1 large egg
    • 1 tsp each cumin, oregano and minced garlic
    • 2/3 cup chipotle bbq
    • 1 1/2 tsp grated orange zest
    • 1/4 cup OJ


    Instructions


    1. Using your hands, mix beef, chips, 1/3 cup cilantro, scallion and egg, cumin, oregano and garlic in a bowl until well combines. Form into 30 balls.
    2. Coat a large nonstick skillet with spray and heat over med heat. Add meatballs and increase heat to med high and cook 5-7 minutes, turning until browned and cooked thru.
    3. Add BBQ sauce and orange juice and zest and remaining cilantro to skillet. Cook, tossing, over low heat until meatballs are coated. Transfer to serving plate and toothpick for serving.
