Blueberry Lemon Quinoa

List of Ingredients
- 2 cups nonfat milk
- 1/2 tsp salt
- 1 cup quinoa, rinsed and drained
- 3 tbl maple syrup
- 1/2 tsp finely grated lemon zest
- 1 cup blueberries
- 1 tbl flaxseed meal
Instructions
- Heat milk with salt over medium hear until warm, about 3 minutes.
- Stir in quinoa, reduce hear to med-low and simmer, covered, until liquid is absorbed - 17 to 20 minutes.
- Remove from heat and stir in syrup and zest.
- Fold in blueberries and flaxseed meal.
