Mint Hot Chocolate

List of Ingredients
- 1/4 cup chilled heavy cream
- 4 Tbsp sugar, divided
- 3 Tbsp Dutch process cocoa powder
- 4 cups milk
- 4 oz chopped semisweet chocolate
- 1/2 tsp mint extract
- Shaved Chocolate; garnish
Instructions
- Beat chilled cream and 1 Tbsp sugar till sot peaks form. Cover and refrigerate until ready to serve.
- In saucepan, combine 3 Tbsp sugar and cocoa. Gradually whisk in milk. Place over med heat and bring to simmer, whisking frequently. Add chopped semisweet chocolate and whisk until melted. Stir in mint.
- Divide hot chocolate among warm mugs. Top with chilled cream and sprinkle with shaved chocolate.
