    Paleo Crockpot Recpies


    List of Ingredients


    • 2 lbs raw shrimp
    • 2 cups cauliflower florets
    • 2 cups diced tomatoes
    • 1 yellow onion, chopped
    • 1 yellow pepper, chopped
    • 1 cup canned coconut milk
    • 1/2 cup veg broth
    • 1 1/2 tsp curry powder
    • 1/4 tsp ground cumin
    • 1/4 tsp cayenne pepper


    Instructions


    1. Combine cauliflower, tomatoes, onion and pepper in crockpot.
    2. Whisk together the coconut milk, vegetable broth, curry powder, cumin and cayenne pepper.
    3. Stir the liquid into the vegetables.
    4. Cover the crockpot and cook on high heat for 3 hours.
    5. Turn the crockpot off and stir in the shrimp.
    6. Cover and let rest for 10-15 minutes until the shrimp is cooked.
