Paleo Crockpot Recpies
List of Ingredients
- 2 lbs raw shrimp
- 2 cups cauliflower florets
- 2 cups diced tomatoes
- 1 yellow onion, chopped
- 1 yellow pepper, chopped
- 1 cup canned coconut milk
- 1/2 cup veg broth
- 1 1/2 tsp curry powder
- 1/4 tsp ground cumin
- 1/4 tsp cayenne pepper
Instructions
- Combine cauliflower, tomatoes, onion and pepper in crockpot.
- Whisk together the coconut milk, vegetable broth, curry powder, cumin and cayenne pepper.
- Stir the liquid into the vegetables.
- Cover the crockpot and cook on high heat for 3 hours.
- Turn the crockpot off and stir in the shrimp.
- Cover and let rest for 10-15 minutes until the shrimp is cooked.
