    List of Ingredients


    • 2 ripe nectarines or peaches
    • 2 tsp butter
    • 4 tsp sugar, divided
    • 1/3 cup part-skim ricotta
    • 1/4 tsp cinnamon
    • Honey and Mint


    Instructions


    1. Cut nectarines in half and remove pits
    2. In a nonstick skillet, melt butter and 2 tsp of sugar over med heat. Place nectarines cut side down; cook 1-2 minutes until cut side turns lightly caramelized.
    3. In small bowl combine ricotta, 2 tsp of sugar and the cinnamon. Scoop mix into the nectarines; top with a drizzle of honey and a mint sprig.
