Ricotta Peach

List of Ingredients
- 2 ripe nectarines or peaches
- 2 tsp butter
- 4 tsp sugar, divided
- 1/3 cup part-skim ricotta
- 1/4 tsp cinnamon
- Honey and Mint
Instructions
- Cut nectarines in half and remove pits
- In a nonstick skillet, melt butter and 2 tsp of sugar over med heat. Place nectarines cut side down; cook 1-2 minutes until cut side turns lightly caramelized.
- In small bowl combine ricotta, 2 tsp of sugar and the cinnamon. Scoop mix into the nectarines; top with a drizzle of honey and a mint sprig.
