Pan Fried Pork Chops W/ Grape Salad

List of Ingredients
- Four 1-in thick pork chops
- Salt & Pepper
- 1 tsp dried Oregano
- 2 tbl EVOO
- 1 red onion, sliced thin
- 1 cup red grapes, halved
- 4 oz baby spinach
- 1/4 cup sliced almonds, toasted
- 2 tbl balsamic vinegar
Instructions
- Preheat oven to 400 degrees
- Season the chops with salt pepper and oregano, heat oil in pan until rippling add chops and cook, turning once until browned, about 4 minutes
- Transfer to a baking sheet, reserving skillet and juices, roast until cooked, about 12-15 minutes
- Meanwhile in the skillet, cook red onion for 3 minutes. Stir in grapes and 1/4 cup water and remove from heat
- Remove chops from oven, tent with foil and rest 5 minutes. Stir spinach, almonds and vinger into the onion mixture; season with salt and pepper and serve with the chops.
