    Pan Fried Pork Chops W/ Grape Salad

    List of Ingredients


    • Four 1-in thick pork chops
    • Salt & Pepper
    • 1 tsp dried Oregano
    • 2 tbl EVOO
    • 1 red onion, sliced thin
    • 1 cup red grapes, halved
    • 4 oz baby spinach
    • 1/4 cup sliced almonds, toasted
    • 2 tbl balsamic vinegar


    Instructions


    1. Preheat oven to 400 degrees
    2. Season the chops with salt pepper and oregano, heat oil in pan until rippling add chops and cook, turning once until browned, about 4 minutes
    3. Transfer to a baking sheet, reserving skillet and juices, roast until cooked, about 12-15 minutes
    4. Meanwhile in the skillet, cook red onion for 3 minutes. Stir in grapes and 1/4 cup water and remove from heat
    5. Remove chops from oven, tent with foil and rest 5 minutes. Stir spinach, almonds and vinger into the onion mixture; season with salt and pepper and serve with the chops.
