    List of Ingredients


    • 1 lb boneless chicken thigh, cut unto chunks
    • 1 red pepper, cut into 1/2 i strips
    • 4 scallions, cut into 1-in pieces
    • 1/2 cup apricot preserves
    • 1/2 cup bottled BBQ sauce
    • 2 tbsp cider vinegar
    • 8oz pineapple chunks, drained


    Instructions


    1. Place chicken and 2 tbsp cornstarch in ziplock bag and shake t coat. Add oil to skillet and stir-fry 3-5 minutes, remove to plate.
    2. Add a little more oil to skillet and add veggies. stir-fry 3-5 minutes until crisp tender.
    3. Combine sauce ingredients and add to skillet with chicken, toss to combine. serve with rice.
