List of Ingredients
- 1 lb boneless chicken thigh, cut unto chunks
- 1 red pepper, cut into 1/2 i strips
- 4 scallions, cut into 1-in pieces
- 1/2 cup apricot preserves
- 1/2 cup bottled BBQ sauce
- 2 tbsp cider vinegar
- 8oz pineapple chunks, drained
Instructions
- Place chicken and 2 tbsp cornstarch in ziplock bag and shake t coat. Add oil to skillet and stir-fry 3-5 minutes, remove to plate.
- Add a little more oil to skillet and add veggies. stir-fry 3-5 minutes until crisp tender.
- Combine sauce ingredients and add to skillet with chicken, toss to combine. serve with rice.
