    • 4 Turkey or Chicken Cutlets
    • 2 eggs, beaten
    • 1 cup dried, seasoned bread crumbs
    • Baby Arugula
    • 1 can cannellini beans
    • 1 onion, sliced thin
    • 1/2 cup halved grape tomatos
    • Vinigrette Dressing


    Instructions


    1. Dip cutlets into beaten egg then coat with seasoned bread crumbs. Brown in a little oil in large skillet until booked through.
    2. Meanwhile, in bowl, toss remaining ingredients. Top salad with cutlets.
