- 4 Turkey or Chicken Cutlets
- 2 eggs, beaten
- 1 cup dried, seasoned bread crumbs
- Baby Arugula
- 1 can cannellini beans
- 1 onion, sliced thin
- 1/2 cup halved grape tomatos
- Vinigrette Dressing
Instructions
- Dip cutlets into beaten egg then coat with seasoned bread crumbs. Brown in a little oil in large skillet until booked through.
- Meanwhile, in bowl, toss remaining ingredients. Top salad with cutlets.
