Asparagus Potato Soup

List of Ingredients
- 3 1/2 lbs asparagus, trimmed & cut into 1-in
- 3-4 large potatoes, peeled & cut into 1/2 in cubes
- 3-4 med yellow onions, peeled & cut into slim wedges
- 12 cup chicken broth
- 3/4 tsp ground mace
- 1/2 tsp ground nutmeg
- 1-2 tsp salt
- 1 tsp pepper
- 1 tsp McCormick's Season All
- Handful grated Parmesan cheese
Instructions
- Place ingredients, except cheese in a large saucepan. Bring to a simmer over med heat, then adjust so it bubbles gently.
- Cover & simmer 30-35 minutes, until veg. are very tender. Cool the soup still covered for 20 minutes.
- Puree the broth & veggies in batches.
- Serve topped with cheesee.
