Pasta and Fresh Tomato Sauce

Ingredients
4 ounces dried rotini or fusilli
2 cups coarsely chopped plum tomatoes
2 teaspoons olive oil
1/4 teaspoon salt
3 tablespoons shredded fresh basil
1/4 cup shaved or grated Parmesan or Romano cheese
1/4 teaspoon pepper
Directions
1. Cook the pasta according to package directions; drain.
2. Meanwhile, in a saucepan combine tomatoes, olive oil, and salt. Cook over medium-low heat until heated through and tomatoes start to juice-out slightly. Stir in the basil.
3. Divide pasta among 4 plates. Top each serving with some of the tomato mixture. Sprinkle with Parmesan cheese and pepper. Makes 4 servings.
