Stuffed Jalapeno Poppers

Deep fryer or large heavy duty pot
Slotted spoon or tongs
Measuring cup
Cheese grater
Ingredients
24 fresh jalapeno peppers (1 1/4 lb) medium size
1 1/2 C Shredded Cheddar cheese
1 8 oz Cream cheese
6 C Vegetable oil for frying
3 Eggs, slightly beaten
2 C Bread crumbs

Time required: Prepare: 5 minutes Cook: 15 minutes
Fryer temperature: 375 degrees
Difficulty: Average to easy
Directions
1. Heat oil in deep-fat fryer to 375* or in large pot until oil registers 375*.
2. In bowls, put wisked eggs in one, bread crumbs in the other.
3. Cut stem off peppers. Remove seeds and white membrane.
4. Mix cheeses together and stuff peppers with cheese.
5. Dip peppers in egg wash, then coat with bread crumbs.
6. Place on drying rack. When all peppers are coated,
set aside for 15 min. to set up and dry.
7. Drop peppers, 5-6 at a time, into hot oil. Fry 2-3 minutes, until golden.
8. Remove to platter lined with paper towels to drain. Repeat with remaining peppers. Serve immediately.
Serve with
Dips, salad dressings, and vegetable sticks.
Warm up the crowd with this before a big game on TV.
Variations
*Add other grated cheeses.
*Add bacon bits to cheese, or use pepperoni bits, broccoli, or anything you like with cream cheese.
*Use seasoned bread crumbs, but this is best done with plain bread crumbs.
*Try using Japanese Panko bread crumbs. They stay crisp after you fry. Works great, but bland flavor. Try them on other battered and fryed foods.
