    Oven Baked Chicken

    Source of Recipe

Submitted by Barbara Olsen recipe from Vickie Salsbury

    Recipe Introduction

This is a recipe from the good ones that Barbara gave me.

    List of Ingredients

    Tools

    2 Bowls
    Pot
    Baking sheet
    Measuring cup
    Spoon
    Hot pad

    Ingredients

    1/2 C Corn flakes
    1/2 C Ritz crackers
    1/4 C Flour
    1 Egg
    1/3 C Milk
1 Cut up chicken in 8 pieces or all breasts

    Recipe

    Serves: 8 pieces
Time required: Prepare: 15 minutes Cook: 1 hour
    Oven temperature: 350
    Difficulty: Average

    Directions

    1. Preheat oven to 350 degrees.

    2. Crush corn flakes and crackers in one bowl.

    3. Mix egg and milk in other bowl.

    4. Dip chicken in liquid, then crumbs. For a thicker crust, repeat process.

    5. Put chicken on sheet and bake at 350 degrees for 1 hour. Check on it at 45 minutes.
Note: You can bake at 400 degrees for 15 minutes then at 375 degrees for the remaining time till it is done.

    Serve with

Large green salad, with chicken sliced and in the salad. Or serve as a side to the salad and a rice dish.

With a side of spaghetti or fettucini, and a garlic bread.

This would go great over rice pilaf, cous cous, or plain rice.

Serve with mashed potatoes and gravy, dilly asparagus, salad, french bread.

    Variations

*Make with sweet onions like walla walla, mayan, or what you have.

*Butterfly the breasts. Cut apart the two halves, and make the recipe just the same. Serve as a sandwich on a hogie roll, rustic bread, toasted french loaf, onion roll, or a toasted bagel. Can serve covered with marinara sauce.

*Sprinkle grated parmasean cheese in the crumbs recipe above. Or coat heavily after dipping in liquid again, then in parmasean cheese.

*Add any seasonings you like like parsley, lemon pepper, garlic, onion powder, etc.
